Only two months after their top floor opened (see here), Bar Pilar is kicking things up a notch with a delicious new Dining Room menu.  Chef Justin Bittner has been working tirelessly to put out new dishes every week, with some old familiar favorites staying and many more that are brand new added to the list.  You can’t go wrong with the double cut domestic lamp chop, so succulent and cooked to perfection I almost forgot my manners when trying to eat the bone clean (comes with creamy polenta, green beans and the tastiest beefsteak tomato wedge you’ll have all summer); or, the all day roasted pork (layered on a toasted crostini), which is then smoked over hickory-apple-maple chips to give it that last hint of savory sweetness.  Craving fish? No problem.  There’s plenty of seafood nibbles worth your money, like the rustic flavors of the Alaska Halibut with asparagus and a smoked cherry tomato sauce, or the seared sea scallops, so light and refreshing I could have eaten a dozen more.

Additionally, mixologist Jonathan Fain has been developing the new “Periodic Table of Cocktails” and has some truly exciting new cocktail concoctions to share, like the beautiful Bermuda Daiquiri, which boasts 10 cane rum and bermuda liquor that’ll have you buzzed just after one.  Fain has even done a spin on the Pimm’s Cup and the Dark & Stormy (with housemade gingerbeer), both of which are absolute-must-try’s for the cocktail hungry.

My personal favorite? The Cuba Libre, a magical alcoholic float which starts off in a highball glass made from a salvaged Coke bottle, topped with a cherry soaked in brandy and Southern Comfort, and a mound of housemade absinthe whipped cream.  Trust me when I tell you, you’ll need a designated driver if you have more than one. Woo, Delicious!
