Hosted by Cuisine Solutions, pioneers of the sous vide cooking method.

Guests will explore the modern French roots of the sous vide technique enjoying innovative cuisine and craft cocktails prepared by Cuisine Solutions acclaimed chefs. Special guest Chef Kyle Connaughton of SingleThread, which earned three Michelin stars in 2018, is among the group of talented culinary innovators being showcased at this brunch. SingleThread is a source-focused, farm-driven restaurant and inn concept that offers its diners and guests Japanese-inspired preparations of seasonal cuisine and a uniquely curated taste of Sonoma Wine Country. Local chefs featured from Washington, DC’s top restaurants will include Bryan Voltaggio (Estuary), David Deshaies (Unconventional Diner), Nicholas Tang (DBGB Kitchen & Bar), and Todd Gray (Equinox).

The afternoon begins with a culinary experience featuring artful drinks, created by incorporating sous vide techniques to complement the tempting passed hors d’oeuvres. Brunch follows in Estuary, inviting guests to explore individual food stations spotlighting many of Cuisine Solutions’ signature sous vide proteins, as well as sous vide creations prepared by Washington’s leading restaurants. Tickets for this event are all-inclusive, priced at $125 per person and will go on sale through Eventbrite on January 6^th. For questions about attending contact [email protected]. All proceeds from the ticket sales will benefit C-CAP, a national nonprofit that empowers underserved youth through the culinary arts by preparing them for the workplace. They do so by partnering with local high schools and providing education, career and life skills development through internships, job training, mentoring, scholarship opportunities, college advising, career and technical education, and industry access. Guests will be invited to participate in a silent auction for sous vide-related prizes and dining experiences with all proceeds raised also supporting C-CAP.

Profs and Pints presents, “Ancient Chinese Philosophy,” with Justin Jacobs, associate professor of history at American University and scholar of ancient China and the Silk Road.

Saturday, January 25th ushers in the Chinese New Year. Why not put yourself in the right mindset with a special matinee Profs and Pints talk on ancient Chinese philosophers, who left an enduring legacy still with us today?

Your guide to understanding these leading thinkers will be Justin Jacobs, who also has left Profs and Pints audiences spellbound with his talks on the Silk Road, “the real Indiana Jones,” and the history of Tibetan Buddhism.

He’ll introduce some of the most important thinkers from ancient China—including Confucius, Mozi, Mencius, Xunzi, Zhuangzi, and Han Feizi—and he’ll discuss how they tried to change the world they lived in. He’ll examine what they had to say about the meaning of life, the role of the state, the importance of civilization, relationships among people, and how to gain and maintain power.

His talk also will cover one of the most violent and innovative periods in Chinese history—the Warring States era of 475–221 B.C.—and how its conclusion ushered in the age of empires in East Asia.

Profs and Pints presents: “Dolphins of the Potomac,” with Janet Mann, professor of biology and psychology at Georgetown University and author of Deep Thinkers: Inside the Minds of Whales, Dolphins and Porpoises.

Having spent 30 years studying wild bottlenose dolphins 13,000 miles away, in Western Australia, Janet Mann was overjoyed to encounter them in the Potomac River, literally in her backyard. She responded by launching the Potomac-Chesapeake Dolphin Project, a research project that has documented more than 1200 individuals, including one they watched being born in the Potomac River.

Come hear give a fascinating talk from one the world’s leading dolphin experts on dolphins and what the local research project has found.

You’ll learn how bottlenose dolphins, which have brains similar in size to ours and much larger than chimpanzees’, navigate the marine world using cognitive abilities strikingly different from our own. You’ll gain a deep understanding of how they maintain their own complex society, with long-term bonds, friends, allies, and enemies.

You’ll become familiar with the habits of our local dolphin population and find out why they are coming into the Chesapeake Bay and Potomac River each year and where they travel on their journeys. You’ll also be introduced to local dolphin residents, who—this is Washington, after all—now bear names such as Frederick Douglass, Benjamin Franklin and Nancy Pelosi.
