FOOD PORN: Bourbon Steak Pig Out

For the second year in a row, Bourbon Steak abandoned their normally highly refined ways and hosted the PIG OUT, their annual celebration of all things pig, despite the David Varley’s departure from the restaurant. 300 people showed up bright and early at noon on Sunday and promptly got to eating (and drinking, since, in perfect synergy with DC BEER WEEK, DC Brau was on board with all manners of serious beer to go with your serious pork consumption). Unlike last year’s porkgy, which was more of an extension of COCHON 555, Executive Chef Adam Sobel and his team took a more down-home bbq approach. Pork tacos, (including chicarrones, carnitas,cabeza and barbacoa) with crispy pork rinds and pig ears as toppings), delicious Red Apron hot dogs, a whole hog (naturally) with jalapeno corn bread, peach and mixed greens salad, slaw, cheese and butter slathered corn on the cob and oysters (as palate cleansers, naturally) and ALL THAT before dessert (which saw Pastry Chef Brenton Balika churning out fresh made ice cream and assorted seasonal pies, sprinkled with pork-filled garnishes). To say that it was delicious is an understatement. The fact that I ended up taking a blisfully full 3.5 hour nap afterwards is recommendation enough.
